Sweet and Spicy Peach Jalapeño Glazed Chicken
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
For the Peach Jalapeño Glaze:
1 cup fresh peaches, diced (or canned peaches, drained)
2 tablespoons honey
1 tablespoon apple cider vinegar
1 jalapeño, finely chopped (seeds removed for less heat)
1/4 teaspoon chili flakes (optional)
1/4 teaspoon salt
Directions:
Preheat your oven to 375°F (190°C). Season the chicken breasts with garlic powder, smoked paprika, salt, and black pepper.
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown. Remove and set aside.
In the same skillet, add the diced peaches, honey, apple cider vinegar, jalapeño, chili flakes (if using), and salt. Stir and cook for 3-4 minutes until the peaches soften and the mixture becomes syrupy.
Return the chicken to the skillet, spoon the glaze over the chicken, and transfer the skillet to the oven. Bake for 15-20 minutes, or until the chicken is fully cooked (internal temperature of 165°F/74°C).
Remove from the oven, let the chicken rest for 5 minutes, and serve with the peach jalapeño glaze spooned over the top.
