Savory Pancit Noodles with Veggies and Chicken
Ingredients:
200g Pancit noodles
1 tablespoon olive oil
2 cloves garlic, minced
1 onion, chopped
1/2 cup shredded chicken (cooked)
1/2 cup carrots, julienned
1/2 cup bell pepper, sliced
1/4 cup green beans, chopped
1/4 cup soy sauce
1 tablespoon fish sauce (optional)
1/4 teaspoon pepper
1/4 cup water
2 tablespoons spring onions, chopped
1 hard-boiled egg (for garnish)
Directions:
Cook the Pancit noodles according to package instructions. Drain and set aside.
Heat olive oil in a large pan or wok over medium heat. Add garlic and onion and sauté until fragrant and translucent.
Add the shredded chicken, carrots, bell pepper, and green beans to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
Add soy sauce, fish sauce (optional), and pepper to the mixture. Stir well to coat the vegetables and chicken.
Pour in the water and bring to a simmer. Let it cook for 2-3 minutes.
Add the cooked Pancit noodles to the pan, tossing everything together until evenly mixed and heated through.
Garnish with chopped spring onions and a halved hard-boiled egg.
