Grilled Sweet Chili Chicken Skewers
Ingredients:
4 boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon grated ginger
1 tablespoon lime juice
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Wooden skewers (soaked in water for 30 minutes)
Directions:
In a bowl, combine sweet chili sauce, soy sauce, honey, olive oil, garlic, ginger, lime juice, salt, and pepper. Stir until well mixed.
Add the cubed chicken to the marinade and mix until all pieces are evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
Preheat your grill or grill pan to medium-high heat.
Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
Grill the skewers for 6-8 minutes per side, or until the chicken is fully cooked and has reached an internal temperature of 165°F (74°C).
Once done, remove from the grill and let rest for a few minutes.
Garnish with freshly chopped cilantro and serve immediately.
