Bourbon Glazed Chicken
Ingredients:
1 lb (450 g) boneless, skinless chicken thighs, cut into bite-sized pieces
2 tablespoons olive oil
1/2 cup bourbon (or substitute with apple juice for a non-alcoholic version)
1/4 cup soy sauce
1/4 cup brown sugar
2 tablespoons apple cider vinegar
2 cloves garlic, minced
1 teaspoon ginger, grated
1 tablespoon cornstarch (optional, for thickening)
1/4 teaspoon red pepper flakes (optional, for heat)
Green onions, chopped (for garnish)
Cooked rice (for serving)
Directions:
Heat olive oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook for 6-7 minutes until browned and cooked through. Remove from the skillet and set aside.
In the same skillet, add bourbon, soy sauce, brown sugar, apple cider vinegar, garlic, ginger, and red pepper flakes (if using). Stir to combine and bring the sauce to a simmer.
Let the sauce simmer for 5-7 minutes, allowing it to reduce and thicken slightly. If you'd like a thicker sauce, mix the cornstarch with a little water and stir it into the sauce, simmering for an additional 1-2 minutes.
Return the cooked chicken to the skillet and toss to coat with the bourbon sauce. Let it cook for another 2-3 minutes, allowing the flavors to meld together.
Serve over cooked rice and garnish with chopped green onions.
