Grilled Chicken Skewers with Sweet Soy Glaze

 Ingredients:

2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

1 tablespoon sesame oil

1/4 cup soy sauce

2 tablespoons mirin

2 tablespoons sake

2 tablespoons brown sugar

1 clove garlic, minced

1 tablespoon ginger, grated

1 tablespoon rice vinegar

1 teaspoon sesame seeds (optional)

2 green onions, chopped for garnish

Bamboo skewers (soaked in water for 30 minutes if grilling)

Directions:


In a medium bowl, whisk together soy sauce, mirin, sake, brown sugar, garlic, ginger, and rice vinegar until the sugar dissolves and the marinade is smooth.

Place the chicken pieces into a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best flavor.

Preheat your grill or grill pan to medium-high heat. If using skewers, thread the marinated chicken onto the soaked bamboo skewers.

Brush the grill with vegetable oil to prevent sticking. Grill the chicken skewers for 3-4 minutes on each side, basting with the leftover marinade during the cooking process, until the chicken is fully cooked and slightly charred on the outside.

Once cooked, remove the skewers from the grill and transfer to a serving plate.

Drizzle the remaining marinade over the skewers, sprinkle with sesame seeds (if using), and garnish with chopped green onions. Serve hot.
