Grilled Chicken Skewers with Creamy Tzatziki Sauce
Ingredients:
2 boneless, skinless chicken breasts (cut into cubes)
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon lemon zest
1/2 teaspoon salt
1/4 teaspoon black pepper
8 wooden skewers (soaked in water for 30 minutes)
1 tablespoon lemon juice
Fresh parsley, chopped (for garnish)
For the Tzatziki Sauce:
1 cup Greek yogurt
1/2 cucumber, grated and excess moisture squeezed out
1 tablespoon olive oil
1 tablespoon lemon juice
1 garlic clove, minced
1 tablespoon fresh dill, chopped
Salt and pepper to taste
Directions:
Preheat grill or grill pan to medium-high heat.
In a bowl, mix the olive oil, oregano, garlic powder, lemon zest, salt, and pepper. Toss the chicken cubes in this marinade and let sit for 10 minutes.
Thread the marinated chicken onto the skewers.
Grill the chicken skewers for 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
While the chicken is grilling, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, and dill in a bowl. Season with salt and pepper to taste.
Once the chicken is done, remove the skewers from the grill and serve hot with a generous dollop of tzatziki sauce on the side. Garnish with fresh parsley.
