Warm and Healing Ginger Chicken Soup for Comfort and Wellness
Ingredients:
2 boneless chicken breasts, sliced thinly
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1-inch piece fresh ginger, peeled and thinly sliced
4 cups chicken broth
1 carrot, peeled and sliced
1 celery stalk, sliced
1/2 cup mushrooms, sliced
1 tablespoon soy sauce
1/2 teaspoon ground turmeric
Salt and pepper to taste
1 tablespoon fresh parsley, chopped
1/4 cup green onions, chopped
Juice of 1 lime (optional for added freshness)
Directions:
Heat olive oil in a large pot over medium heat. Add the chopped onion, garlic, and sliced ginger. Sauté for 3-4 minutes until fragrant and the onion becomes translucent.
Add the chicken breast slices to the pot and cook for about 5-6 minutes, stirring occasionally until the chicken is cooked through.
Stir in the carrot, celery, and mushrooms, cooking for another 2-3 minutes.
Pour in the chicken broth and bring the mixture to a simmer. Add soy sauce, ground turmeric, salt, and pepper. Let the soup simmer for 20-25 minutes, until the vegetables are tender.
Taste the soup and adjust the seasoning with more salt, pepper, or soy sauce if desired.
Ladle the soup into bowls, garnishing with fresh parsley, green onions, and a squeeze of lime juice for an added burst of freshness.
