Spicy Jalapeño Peach Grilled Chicken

 

Ingredients:


4 boneless, skinless chicken breasts

2 fresh peaches, sliced

1 jalapeño, finely chopped

1/4 cup honey

2 tablespoons olive oil

1 tablespoon apple cider vinegar

2 teaspoons smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro for garnish

Directions:


Preheat your grill to medium-high heat.

In a small bowl, whisk together honey, olive oil, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper to create the glaze.

Season chicken breasts with salt and pepper. Brush each breast with the prepared glaze.

Grill the chicken for 6-7 minutes per side, brushing with more glaze occasionally, until the chicken reaches an internal temperature of 165°F (75°C).

While the chicken cooks, grill the peach slices and jalapeño for 2-3 minutes per side, until slightly charred and softened.

Once the chicken is cooked through, remove from the grill and top with the grilled peaches and jalapeños. Garnish with fresh cilantro.
