Hearty Beef and Cauliflower Curry with a Rich, Spicy Sauce

 Ingredients:

For the Curry:

1 lb beef stew meat, cut into 1-inch cubes

2 tbsp olive oil

1 onion, chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

1 medium cauliflower, cut into florets

2 medium tomatoes, chopped

1 cup coconut milk

1 cup beef broth

2 tsp ground turmeric

1 tsp ground cumin

1 tsp ground coriander

1 tsp garam masala

1/2 tsp ground cinnamon

1/2 tsp ground cayenne pepper (optional, for heat)

Salt and black pepper to taste

Fresh cilantro, chopped (for garnish)

2 tbsp chopped cashews (optional, for garnish)

Directions:


Heat the olive oil in a large pot over medium heat. Add the beef cubes and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

In the same pot, add the chopped onion, garlic, and grated ginger. Cook for 3-4 minutes, stirring occasionally, until the onion becomes translucent.

Add the chopped tomatoes to the pot and cook for another 5 minutes, until they begin to break down and release their juices.

Stir in the turmeric, cumin, coriander, garam masala, cinnamon, cayenne (if using), salt, and black pepper. Cook for 1-2 minutes, allowing the spices to bloom and release their aroma.

Add the cauliflower florets, coconut milk, and beef broth to the pot. Bring the mixture to a simmer and cover. Cook for 20-25 minutes, or until the cauliflower is tender and the beef is fully cooked.

Taste and adjust seasoning, adding more salt or spices if desired.

Garnish with fresh cilantro and chopped cashews before serving. Serve hot with rice or naan bread.
