Chicken Spiedini
Ingredients:
4 boneless, skinless chicken breasts (cut into bite-sized pieces)
1 cup Italian-style breadcrumbs
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 tablespoon lemon zest
1 teaspoon dried oregano
1/4 cup olive oil
Salt and pepper to taste
Wooden or metal skewers
Lemon wedges for serving
Directions:
Prepare the marinade: In a large bowl, combine olive oil, minced garlic, fresh parsley, lemon zest, oregano, salt, and pepper. Add the chicken pieces to the marinade and let it sit for 15 minutes (or up to 2 hours for deeper flavor).
Prepare the breadcrumbs: In another shallow bowl, mix the breadcrumbs and grated Parmesan cheese.
Assemble the skewers: Thread the marinated chicken onto skewers, leaving a bit of space between each piece.
Coat the chicken: Roll each skewer in the breadcrumb mixture, pressing gently to ensure the breadcrumbs stick to the chicken.
Grill the spiedini: Preheat the grill to medium-high heat. Grill the skewers for about 8-10 minutes, turning occasionally, until the chicken is golden and fully cooked through (internal temperature of 165°F/75°C).
Serve: Drizzle with olive oil, squeeze fresh lemon juice on top, and serve with lemon wedges.
