Spicy Cajun-Style Beef and Rice Skillet

 Ingredients:

1 lb ground beef

1 tablespoon olive oil

1 onion, chopped

1 bell pepper, chopped

2 cloves garlic, minced

1 cup long-grain rice

2 cups beef broth

1 tablespoon Cajun seasoning

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional for extra heat)

Salt and pepper to taste

1/2 cup diced tomatoes (canned or fresh)

1/2 cup green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Directions:


Heat olive oil in a large skillet or Dutch oven over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked, about 5-7 minutes. Remove any excess fat.

Add the chopped onion, bell pepper, and garlic to the skillet and sauté for 3-4 minutes until the vegetables are tender.

Stir in the rice and cook for 1-2 minutes to lightly toast it.

Add the beef broth, Cajun seasoning, smoked paprika, cayenne pepper (if using), salt, and pepper. Stir to combine.

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.

Stir in the diced tomatoes and cook for an additional 2-3 minutes.

Remove from heat and garnish with green onions and fresh parsley.

Serve immediately and enjoy!
